For Ruhee, chocolate has been a passion ever since she remembers. Right from her childhood days, when she would hide chocolates in her schoolbag, this is what she has ever dreamt of. Then she may not have understood the finer aspects of chocolate, she may not have understood why some chocolates are white while others are dark, why some are crisp and break with a snap while others are delicate and are filled with a honey sweet liquid? All she had was her love for cocoa beans and a youth filled with dreams. A young and dynamic Chocolatier, Ruhee Bhimani is a graduate in hotel management from Mumbai University who has spent the last few years of her life learning the finer nuances of chocolate making. A self labeled choco-fanatic, Ruhee has trotted around the globe and visited many master chefs to watch them closely and learnt the skill of making chocolates with finesse. Furthermore, she spent years, experimenting with various flavors, and creating mouth watering recipes. Hence after gaining considerable experience she decided to launch a course of soul stirring chocolates at her newly launched Cocoa Cottage Academy.
Chocolate making is not just a profession for this smiling young lady, it is her passion. Ruhee believes chocolates are a piece of art and hence she personally traines the students, who are as passionate as herself in making chocolate delicacies.Ruhee's profound knowledge has helped in creating a collection of unique flavours which are a delight to the taste buds. After years of experience in the Bakery & Confectionary industry, Ruhee has successfully created an ACADEMY which teaches students the art of Chocolate making,Desserts and Bakery. Today, she has come a long way from being a little child with a bag full of chocolates to Mumbai's brightest Chocolatier with workshops full of delectable chocolates, desserts and bakery delicacies.

The Chocolate Workshop Courses:
This course welcomes all the choco-lovers who are keen to learn the art of chocolate making. If you enjoy making candies and want to understand the basic know-how then joining a chocolate making course will help you Master the art of tempering Chocolates. Chocolatier starts with a fascinating discussion about the history of chocolate and production process from bean to bar. Whether making chocolate is a hobby for you or you wish to pursue it as a serious career choice, it will take you to next level of chocolate making.
This hands-on one day class will enable you to create a range of chocolate products.This course is designed for the participants who are working as professionals with a good knowledge about tempering of chocolates and basic skills and techniques of handling chocolates.Its recomended for professional who have worked with couvertures chocolates or have completed the Beginner Course.
Advance course for Expert Chocolatiers:
This course will teach you how to create a range of newly designed flavours and textures all encased in delicious chocolate. A highly specialised course designed for Expert Chocolatiers who wish to further expand their Culinary knowledge and skills. It is a 2day rigorous and intensive class which will further develop and expound upon the chocolatiering skills you have developed in the chocolate courses so far.

Learn to create a range of delicious desserts in this 1 day demo class. This class focuses on creating plated desserts incorporating a range of complimentary textures and flavours. Under the guidance of our expert chef you will develop crucial plating and garnishing skills. Our step-by-step instructions make this class perfect for beginners.
Classical desserts in a glass:
Create & assemble a selection of classical dessert favourites prepared in mini plastic glasses , this demo class will be a visual delight of textures & taste.These desserts will amaze your friends & family . Desserts made will be served to enjoy & taken home.

The Art of Macaroon making:
Macaroons have become a world trend in the past several years, these little gems need attention & patience to perfect. This hands-on class guides you in creating and piping macaroons, ganache fillings and hand dipping in couverture.
The participants will get to make & pipe the macaroons in groups. Providing the essential "secret tips" to creating perfect macaroons a smooth even top and soft moist centre with a thin crisp full shell are all marks of a successful macaroon.
Brownies are unquestionably one of America's most beloved treats. From light and cakey, to chewy ooey gooey, this favourite treat comes in all tastes and textures. Whether you like them plain, iced, with nuts or chocolate chunks, we've assembled the best tips and techniques to make every batch a sensation.
Are you tired of the "same old" when it comes to cupcakes? learn both classics and new twists on cupcakes that taste great and are never dry . Spend 3hrs a days making the most beautiful cupcakes ever. The first half is spent making delicious cupcakes and second half, you will decorate the cupcakes with different designs and frostings.
Art of Cakes:
Another selection of Classical and Contemporary cakes with a modern twist of presentation. Showcasing recipes & techniques to create a professional range of cakes for pastry shops & special occasions. The items will be created by group participation.
Tea Time Cakes:
In this workshop the participants can experience the making of mini pastries in the style of what you would find in afternoon tea selections in hotels around the world. Some classical preparations with new interpretations these recipes will provide a good foundation to impress your friends & family.
The workshops are informal, hands-on sessions for beginners and more experienced bakers: with limited numbers per session, everybody gets stuck in and has fun, leaving with baskets of hot, freshly baked loaves and with all the knowledge needed to continue baking Professionally.
